Menu 1.
Cauliflower purée served with fish roe and deep fried Lappish “Puikula” potatoes
Fried reindeer fillet served with potato purée, oven baked winter vegetables and Madeira sauce
Buttermilk pannacotta, blueberries and roasted white chocolate

Menu 2.
Archipelago bread, cold smoked salmon mousse and fish roe
Local lamb fillet served with garlic flavored potato purée and strong red wine sauce
House Tiramisu flavored with sea buckthorn berry

Sugar salted local lamb fillet and Parmesan
Arctic char fried in butter, cauliflower purée
served with lemon flavored red wine sauce
Warm milk chocolate mousse and raspberry sorbet

Fillet of beef served wiht parsnip purée, oven baked Lappish “puikula” potatoes
and dark red wine sauce
